espresso. They also tell me I’m the best they’ve had in America. How
do I do that? One drink at a time, one customer at a time, one barista
at a time.

At a time when excellence satisfies and individuality rules. Each
drink, professionally prepared and properly served. Each customer,
excitedly anticipant and deservingly satisfied. Each day, making the
best espresso in New Mexico, making customers angry when I’m
closed, taking time to make an excellent drink, every time.

Every time I make a drink, I put my roaster to use, my experience to
use, and I use filtered well water from deep below the earth.
Speaking of earth, all our spent coffee grounds are composted, I live
less than three miles from work, 10% of our net goes towards
charitable causes, and, in my humble opinion, no one is better than
me in Santa Fe. I’m almost Italy.”
